I had never really considered the subtleties of egg selection. I avoided those little pea-sized eggs and always paid attention to the day of creation. My choosing procedure was simple and quick.
But as it happens, selecting eggs is almost like an art form! My mother-in-law came to see us recently. She requested me to pick up some eggs for baking on my way home while I was occupied with chores. She is a real baking prodigy, and my husband and I always end up gaining a few pounds when she comes to visit because her dishes are so delicious.
As she asked, I purchased the eggs, being mindful of the expiration date. I prefer to avoid making frequent trips to the shop and stock up on groceries.

As it happens, it is. It’s obvious that someone has switched the eggs around, perhaps choosing the best ones. She clarified that store employees don’t always notice the exchanges and that occasionally customers sort through cartons, leaving less desirable eggs left.
However, storage was the primary problem rather than switching. Eggs should always be stored with the blunt ends facing up. Salmonella and other microorganisms are kept at bay by the air pocket in the blunt end. This straightforward guideline increases their shelf life while still guaranteeing safety.
My mother-in-law had pointed out to me a crucial detail! Now, before purchasing eggs, I always make sure they are oriented correctly.
Since I recently learned about eggs in airtight, sealed packaging, I’ve come to rely on them for their safety and freshness.
